A great salad dressing. Enjoy!

makes about 125ml
2 teaspoons finely chopped shallot (Schwartz do a small jar ready chopped)
2.5cm (inch) piece of fresh ginger root, peeled and grated
1 small garlic clove, peeled and finely chopped
1½ tablespoons rice vinegar (very important)
1 tablespoon tomato ketchup (yum!)
1 tablespoon water
100ml olive oil
3 tablespoons light soy sauce

Whisk all ingredients together in a small bowl or screwtop jar and set aside. Keeps for a few days in the fridge.
